Traditional cretan products

under this label we present typical cretan products. In crete a big variety of products will be produced which is mostly unknown. It starts with  Arbaki and ends with Zipporo.

A

>Arbaki: smoked pork, used as meze

>Avocado:  from this fruit they make delicious meze ( avocado salad ). But they also produce  cosmetics like cream shampoo... ( Lappa Avokado in Argyroupolis )

>Carob Products: This are products from Carob-tree , gr. Xaroupi, german Johannisbrotbaum .

The founder of Creta Carob, Mr. Elias Manousakas, calls the fruit " the lost treasure of Crete."

The productline ranges from flour, syrup, tea, coffe , cacao to Muesli.

 

>Cheese: Graviera, Mythitra, Anthotiro, Xynomythitra, Staka are the most famous

-Graviera: Made from unpasteurized sheep`s milk, this local adaption of the Swiss Gruyere is the most famous. When it is several years old it tastes nutty and pungent.

-Mythitra: Soft , creamy fresh cheeese made from the whey of ewes or goats, resembling ricotta. It taste beautiful in pies,,Pites or pure, warm with honey and a good fresh bread.

Anthotiroo: When  Mythitra is dried and matured it is a popular grating cheese called anthotiro. It is used to fill pies, making cheese-cake or they eat it with honey.

-Staka: A delicacy made from cream skimmed off the milk with a little flour till the butter is seperated. The thick yellow cream that remains is like creme fraiche.

>Horta ( wild greens ): the island is purported to have as many as 100 edible weeds ranging from the common dandelion to the more exotic Stamnagathi ( sping chicory ), which is becoming very trendy. Greens are eaten by thenselves in salads or boiled or in amazing combinations with lamb, rabbit fish or octapus.

>Olive oil: Cretans consume more olive oil per head than anyone else in the world and there is more extra virgin oil produced in Crete than elsewhere in Greece, much is organic.

> Paximadi:  twice baked breads from white , wheat rye or barley are found on every cretan table.

>Pies: Three popular sorts of pies you find on crete.

-Kalitsounia:  Are little round pies with a crown made from either sweet or sour myzithra cheese. In chania they are savory and made  from fresh herbs or onions with a mixture of cheeses and mint. Kalitsounia are baked rather than fried If fried they are referred to as Mythitropites or sarikopites when they are formed into spiral shape.

-Sfakianopites:  are from the sfakia region and are raound, flat ( like a pan cake ) pies with sour myzithra, most often served doused in honey. They should be made fresh in a pan!!!!!!!!!!!!!!

-Marathopites: are pies made of wild fennel and mint, originating from the chania area.

>Snails: More important to Cretans than to the French, snails are made in dozens of ways. the most popular is sauted with vinegar and fresh rosemary.

Wine: die bekanntesten Weinregionen Kretas liegen südlich von Heraklion. Aber auch in der Region Kissamos in Westkreta gibt es guten Wein. Ein Tipp ist das Weingut Dourakis in Alikampos bei Vrysses.
